Vegan and Vegetarian Thanksgiving Dinner Offered to the Public at Spa Atlantis - Not Everyone Eats Meat! |
(Pompano Beach, FL)-----Finally, a Thanksgiving dinner for the health conscious! The new, luxurious Spa Atlantis Oceanfront Health and Fitness Resort, on the beach at 1350 North Ocean Boulevard in Pompano Beach is offering vegans and vegetarians an alternative Thanksgiving menu at their Illuminations Restaurant on Thursday, November 28, 2002 from 4 p.m. to 6:30 p.m.
The gourmet dinners created by Illuminations' Executive Chef, Antoine St. Louis will capture the true flavor of Thanksgiving, yet, at the same time offer a delicious and healthy alternative to the traditional fare.
For vegans, Illuminations is preparing wild mushroom seitan or vegetarian stuffed cabbage as an entree. The cost for the vegan dinner is $19.99 per person, plus tax and gratuity. Diners will also have the option of a non-vegan menu featuring organic, Kosher, herb -roasted turkey; organic, Kosher BBQ chicken breast or fresh salmon for $21.99 per person, plus tax and gratuity. Chilean sea bass is, also, available for $25.99 per person, plus tax and gratuity. All entrees are served with salad and a choice of mashed sweet potatoes, mashed potatoes, wild rice pilaf or Atlantis stuffing. For dessert there is vegan pumpkin pie or vegan blueberry pie.
Illuminations is an all-natural and organic restaurant. It does not serve caffeinated beverages, refined sugar, dairy products, bleached flour or alcohol. It is a no smoking facility.

Illumination's charismatic and creative Chef Antoine has over 21 years of experience with organic and natural foods. It began when he was a young man in Haiti, where Antoine learned organic farming from his father, and assisted in running the family farm. He quickly realized a passionate interest in cooking with organic and natural ingredients. Antoine used the produce from the farm as his foundation to creating and developing delicious vegetarian recipes.
Chef Antoine has been a vegan vegetarian for 20 years. He began his professional cooking career in 1981 as Executive Sous Chef for The Unicorn Village Restaurant, one of the first vegetarian restaurants in South Florida. In 1989, the restaurant expanded to a new larger location in Aventura. Chef opened the new Unicorn Village as Production Manager, and remained there until they closed their doors in 1996.
